What Justin describes is true of Moodle-to-Moodle launches; Moodle, as a platform (LTI consumer), allows restriction of PII, via the settings he shows. This results in OpenId fields like given_name, family_name and email being omitted. Regardless of whether the platform is Moodle or not, omission of these fields will result in what you're seeing in the firstname, lastname and email fields. So, what I said above is not entirely true; the platform username (sub) is visible in the firstname field in the above case. If you want to see real user names and emails, just configure the platform to send these over.
